How to Make Mulberry Gummies
This is a simple recipe for making fruit chews / gummies from fruits you pick yourself. They are a safer alternative to the chemical laden and fruit flavored gummies you buy in stores.
Ingredients:
1/4 Cup + 2tsp Clear-Jel
1/3 Cup Honey
1 1/3 Cup Mulberriess
1Tbsp lemon juice (optional)
Step 1. Prep
Depending on the type of dehydrator you have you may need to lay down parchment paper and spray with cooking spray. I have rubber mats for my dehydrator so I do not need to do this.
Fill sink with cold water.
Wash Mulberries in water and vinegar
Step 2. Mix honey and clear-jel together in a pot.
Step 3. Blend mulberries in a blender. You can also mash them.
Step 4. Turn burner heat on a medium setting. Add fruit to pot with the clear-jel and honey. As heat increases begin stirring constantly. I use a rubber spatula to make sure I am getting all residue off the bottom of the pan.
Step 5. When mixture begins to boil add lemon juice. When contents of pot becomes a thick jell, remove from the oven and place the pot in the cold water. Do not let any of the water into the pot.
Step 6. When contents have cooled, scoop the contents into a sandwich bag or other type of kitchen utensil which will allow you to make small gel balls. I use these "disposable" cake decorating bags. When done I wash them and reuse them.
Step 7. Squeeze the contents onto your dehydrator tray. You can make small balls or long strips.
Step 8. Place gel strips in the dehydrator. I set my dehydrator to 135F. When the gel is firm they are done and ready to be placed in a container.
